Bush Tomato Dip

Serves: 10-12 people
Preparation time: 20 minutes
Cooking time: nil
Challenge: Easy

250 ml sour cream
125 g cream cheese
1 tsp mountain pepper leaf
1 tsp lemon myrtle
1-1½ tbsp ground bush tomato
¼ tsp asafoetida powder or 1 tbsp very finely chopped onion
½ tsp salt
½ tsp sugar
¼ tsp ground mountain pepper berry
1 skinned tomato, chopped finely
1 tbsp chopped fresh coriander

Mix all ingredients. Leave to infuse overnight.

Pumpkin Soup 

Serves: 6-8 people
Preparation time: 15 minutes
Cooking time: 1 hour
Challenge: very easy

4 cm fresh ginger
1 onion
1 kg pumpkin
750 ml stock, enough to cover pumpkin
lemon myrtle to taste
mountain pepper leaf to taste
salt to taste

Cut ginger and onion into smaller pieces and sauté in a little oil. Cut pumpkin into smaller pieces and add to onion and ginger. Pour the stock over and bring to a boil. Reduce heat and let the pumpkin simmer until very tender. Puree the pumpkin to a smooth soup. Add lemon myrtle, mountain pepper leaf and salt to taste.
Serve with a dollop of sour cream and freshly chopped parsley.
